I have a can of evaporated milk that is about five years old and I was wondering if I could still use it in a recipe. It's been in a cool, dry place and not opened at all.
It is one of the foodstuffs that people used to use for years, as long as the can was undamaged and not rusted.
That was before the compulsory 'best by' or 'use before' dates.
If you are willing to risk it, open the can and use it on the same day, if it is needed for the recipe, have a new can on hands too.
Or have an alternative in case you do not want to be stuck with an other can of evaporated milk.
