Too funny, I was just looking in my slow cooker cookbook for the same thing. Here's what I found:
2 lbs beef stew meat
SP P to taste
2 Tbs flour
3 Tbs olive oil
1 large onion, finely chopped
1 C smooth or chunky salsa
3 Tbs red wine vinegar
Pinch or dried oregano or marjoram
1/4 C water
1/3 C dry red wine
2 Tbs chopped fresh flat-leaf parsley
1. In a zip-lock bag, toss the beef, in batches, with the salt, pepper and flour.
2. Warm 1 1/2 Tbs olive oil in a large skillet until very hot. Add the onion and cook about 5 min or until softed, transfer to crock pot. Add 1/2 the beef to skillet, brown on all sides, about 3-4 minutes total. Transfer to crock pot. Repeat with the rest of the beef. Add the salsa, vinegar, oregano, and water to crock pot and stir well.
3. Pour wine into skillet and place over medium heat. Stir constantly, scraping up any browned bits stuck to the pan, it will reduce a bit. Pour into crock pot and stir. Cover and cook on Low for 6-8 hours.
4. Season with S & P and add parsley. Serve with rice and/or cheddar biscuits.
